Two butchers, one pig

If you read the horrifying story from The New York Times a few weeks ago (the one about the burger with a side order of E. coli), sourcing your meat is not only a good way to support local butchers, but could actually save your life. But not everyone lives around the corner from Marlow & Daughters, so what’s a New Yorker to do?

For starters, you can head to the New Amsterdam Market this Sunday for a friendly little lesson in butchering. To mark the return of the regional butcher, one of the many highlights of Brooklyn’s burgeoning slow food movement, Tom Mylan of Meat Hook and Josh Applestone of Fleisher’s will team up and butcher a whole pig for your viewing pleasure. Of course, if you’d rather just buy the bacon you can do that too from any of four local butcher shops at the market.

    Of course there’s also another option – to forego all the negative implications of an animal based diet. Thereby improving overall health, sustainability… oh yes and the animals too, would greatly benefit as well. Go Vegan.
