Holland has great cheeses and bread. One of my favorite restaurants is a place called Balthazar's Keuken (Balthazar's Kitchen). It's a twelve-seat restaurant with an open kitchen and a beautifully designed interior and a set menu. It has a bit of a dutch twist. It doesn't feel like you're in France or Italy, but like much of Northern Europe, it leans toward Franch cuisine.

My favorite hotel in the world is in Amsterdam. It's expensive, but worth it. The rooms are enormous and impeccably furnished. The location is perfect for exploring the 9 Streets right on the Prinsengracht Canal. The best room is the Picasso Room, but you'll be happy in any of the rooms there.
Hotel Julien

In Antwerp, Belgium, there's a fantastic small hotel. This one's on my short list. It also has the virtue of being inexpensive! It's called the Hotel Julien. It's in a beautiful old house and maybe has 12 rooms or so. It's very tasteful - in the style of stripped-down modern, without feeling cold.

SHOP
Holland is famous for being world traders. They've been great buyers and sellers of goods from around the world for generations. It's reflected in the shopping experience - there's so much to explore. Almost more than anywhere else in Europe, there are crafts people doing really inventive things.

In Amsterdam, just rent a bike and explore. Be sure to visit "The Nine Streets," the small streets with lots of little boutiques. You can find my favorite book store there called Bookie Wookie - one of a kind books and the book seller has a great sense of humor. It's also a bit of an art gallery.
