Atole Pinon Hotcakes
INGREDIENTS
4 c flour
1 1/2 c blue cornmeal
1/4 c baking powder
1/4 c sugar
1/2 TBSP salt
2 large eggs
4 oz soy oil
6 c milk
4-6 oz pinon nuts (aka pine nuts), shelled and toasted
Butter and maple syrup for serving
DIRECTIONS
In a large bowl, mix all dry ingredients together. In a separate bowl, mix eggs and oil. Add dry ingredients and slowly add milk. Mix until well incorporated but still lumpy, being careful not to over mix. Cook on a hot griddle. Prior to flipping hotcake, spread pine nuts evenly throughout. Serve with butter and warm maple syrup.
